Julie Melanson's Pie Crust
(makes 3 double crusts) 5 1/2 cups flour 1 lb shortening 1 tbs vinegar 1 egg Salt Up to 1 cup cold water
Mix dry ingredients. Cut shortening in until pea-sized. Mix egg and vinegar together. Add enough cold water to mixture to make 1 cup. Pour liquid into shortening/flour mixture and mix with hands until it holds together. Divide into six equal pieces, lay on a floured board, and roll each piece into a circle, transfer bottom crusts to three pans, add filling, add top crusts, crimp edges and bake at 177oC (350oF) until crust is browned. (30-40 minutes)
